Gem Gisborne Chardonnay 2007
“Lemon and stone fruits with quince, fig with a subtle toast in the background.”
The fruit for this wine was grown on the Judd Vineyard in Patutahi, Gisborne. Clones 8021 & 15 grown next to each other, were handpicked then crushed and de-stemmed before being then gently pressed to tank. Wild ferment was initiated in tank and the juice transferred to French barriques (1/3rd new) within which both the alcoholic and malolactic ferments were completed. The wine then spent 14months in oak before being bottled.
